Dinner that I made tonight: Veggie Vindaloo, Spiced Brussels, White Rice & Tandoor Chicken (Soy Chicken for me!). SO GOOD!
I made some batter fried tofu with dinner tonight! It was a first, and they were delicious!

I bought 3 new cookbooks last week @ borders…veggie burgers, indian & irish food…cannot wait to read those and start cooking again!
